They had the meeting at a ranch, and they served really nice tacos. Insurance companies would have served rubber chicken in a hotel conference room.

Single and double isn’t really an indicator, it’s the light crispy roasting of the tortilla(s) and the quality of the fillings/toppings.

These do look delicious.

Are you kidding? As the only structural component of the taco, the tortilla must be double layered for maximum insurance against the inevitable soak through. While not the perfect solution, it’s better than the alternatives of frying or coating in oil.

All fillings being equal, this is what determines a quality taco from a subpar one; otherwise you’re just eating a taco salad and at that point you should’ve just ordered the torta.

Filling are not equal and this really tells you nothing.

Where I come from, if your filling will soak through a tortilla, you’re doing it wrong. The only thing that should possess enough liquid to soak through a tortilla that may be applied to all tacos is salsa, which is only applied immediately before consumption. Meat should generally be dry, except cabeza, barbacoa, and res, which should have doubled tortillas.
